Rice and Beans (Garau Garau Revamped)

Garau Garau is a local delicacy enjoyed in the northern part of Nigeria. It is basically rice and beans eaten with yaji (a blend of pepper, spices and seasoning) and (mai) onion infused vegetable oil.
Cooking Instructions

Cook rice and beans either separately or together until soft and set aside. Fry the oil with diced onion to infuse flavour and aroma (don't burn the onions please). Wash the lettuce, tomatoes, cucumber and onion thoroughly and dice as desired. Crate a small carrot for garnishing

Assemble by scooping rice, beans, your desired vegetables, sprinkle of yaji as desired then drizzle the oil all over. Toss and enjoy.

Please Note: The Yaji is a blend of Pepper, spices and seasoning. Feel free to add any vegetable combination of choice. You could even use leftovers for this🤔 yummy dish.
