Native jollof rice is my go to rice, when I am tired of Plain white rice, fried rice, and jollof rice.
It is so simple, easy to make, full of flavors and certainly delicious.
Native jollof rice can be prepared in different ways depending on where you come from and on individual preference.

Native jollof rice is my go to rice, when I am tired of Plain white rice, fried rice, and jollof rice.

Ingredients

30 minutes
4 servings
  1. 3 Cupsalready parboiled rice
  2. 2-3Chopped shombo (Habanero pepper)
  3. 1 1/2Chopped medium size onion
  4. 1/2Cup/125ml of Palmoil
  5. 3-5Blended Scotch bonnet (ata rodo)
  6. 3 Cupswater or Chicken/Beef stock
  7. 3 Tbsplocust beans
  8. 1-2 CupsShredded smokes fish
  9. 2-3 PiecesDice cooked kpomo
  10. 2Seasoning cubes
  11. 1 CupSliced Efo-shoko (soko)
  12. to taste Salt
  13. 1/4 CupCrayfish
  14. 1/2 CupPrawn

Cooking Instructions

30 minutes
  1. 1

    Add palm oil in a pot set on medium heat, when hot add sliced onions.
    Fry till translucent (it takes about 6 to 8 minutes)

  2. 2

    Add locust beans and saute till fragrant, then add blended crayfish (fry for 2-3minutes). Add blended scotch bonnet and chopped shombo

  3. 3

    Add seasoning cubes, salt to taste and fry for 5-6minutes. (Stir occasionally. If using stock, try not to add much salt because the stock already has a considerable amount of salt)

    Add 3 cups of water and cook for 4 minutes, then add chopped kpomo.

  5. 5

    Add parboiled rice, Stir and combine thoroughly.

  6. 6

    Add smoked fish and prawn then combine again,cover and allow to heat, till rice is properly cooked then turn off heat.

  7. 7

    Add Efo-shoko, Stir to combine. And food is Ready!!!!!
