It looks like jollof rice, but the taste and of course, the aroma is certainly not what you get in jollof rice. Interestingly, Coconut rice is highly nutritious. The coconut milk (extracted from the coconut) used in preparing the rice, is highly saturated fat, it is much healthier than other saturated fat products, and the fat is easily metabolized by the body.

Ingredients

6-10 servings
  1. 3 cupsbasmati rice
  2. Turmeric
  3. 1medium onion
  4. 5-7scotch bonnets
  5. 4medium carrots
  6. Handfulgreen beans
  7. 1/2 cuppeas
  8. 1/2 cankidney beans
  9. Garlic
  10. Oregano
  11. Rosemary
  12. Parsley
  13. White and black pepper
  14. Cumin
  15. Soy and oyster sauce
  16. Seasoning
  17. Coconut milk
  18. Desiccated coconut
  19. Veg oil
  20. Curry
  21. Sausage

Cooking Instructions

    Soak basmati for 30 mins. Parboil with turmeric. Set aside

  2. 2

    In a pan add about 5tbspn veg oil, onion slices,grated scotch bonnet garlic and sauté for about 2-3 mins

    Add diced carrots sweet corn, green beans, kidney beanss, peas, oregano, rosemary, sausage and parsley and keep turning

  4. 4

    Add ground white and black pepper, soy sauce and oyster sauce, cumin, seasoning, curry.

    Add the parboiled rice, coconut milk, turn and later add the desiccated coconut (little)and turn until well incorporated
    Done ✅

    Serve warm.
