Ingredients

  1. 15bread slices
  2. 5medium to big potatoes
  3. 1big carrot
  4. 1 bowlpeas or sweet corn
  5. 2 tbspoil
  6. 1 tbspurad dal
  7. 10curry leaves
  8. 1 tbspginger garlic green chillies paste
  9. 1 tspdry mango powder
  10. 1 tspgaram masala
  11. 1 tspsugar
  12. 1 tspsalt
  13. 1 tbspcashew nuts
  14. 1/2 cupchopped coriander leaves
  15. as neededOil for frying

    Boiling veggies: peel, wash and cut potatoes. Cut into large cutes. Do the same with the carrot. Transfer them to a pressure cooker and add a cup of water (around 100-150 ml). Take a smaller pot/container that can fit in the same pressure cooker. Wash and transfer green peas in that pot/container. Cover it and put it in the Cooker on the top of potatoes and carrots. Cover the cooker and let 3-5 whistles blow on medium heat.

    You will see that the veggies are cooked well, but are dry and in good shape (not dissolved). That's exactly what we are looking for. Drain out water. Mash the carrots and the potatoes together.

    Heat up oil in a fry pan. Add udad Dal.

    You may also roll it in the bread crumbs and then fry to get the crusty layer. In that case you have to fry them longer on medium to low heat to allow the bread under the crust get cooked properly. However, the crumbs make the oil black and full of burnt crumbs.
