Ingredients

3.5 hours
2 - 3 people
  1. 1 kgOyster blade - remove fat and cut into equal sized chunks
  2. 3garlic cloves - diced
  3. 8pickling onions - peeled , though leave the top on, just peel off the first few layers
  4. 1cinnamon stick
  5. Pepper
  6. Salt
  7. 2 tbspraw sugar
  8. Olive oil
  9. 3 tbsptomato purée
  10. 3 cupshot water - from kettle
  11. 1 tspcumin seeds
  12. 1/2 cupwine - red or white
  13. 1/2 cupwine vinegar - red or white
  14. 3Bay leave
  15. 1 sprigRosemary

Cooking Instructions

  1. 1

    Fry the beef in batches in olive oil until slightly brown

  2. 2

    When all the beef has been fried, add the beef all back into the one pot/ pan

  3. 3

    Add garlic and cumin to pot/ pan. Cook for one minute.

  4. 4

    Add the vinegar and wine to the beef and cook on high for 3 minutes

  5. 5

    Add the tomato paste in a cup of hot water and mix

  6. 6

    Add the diluted tomato paste to the beef

  7. 7

    Add the reading two cup of water to the beef and cook for a further 5 minutes.

    In an oven proof dish, add the beef, rosemary, bay leaves, and cinnamon stick.

    Add salt and pepper to taste

  10. 10

    Cover with foil and cook on 160 for 2 hrs

  11. 11

    After 2 hrs, add the onions to the dish as well as the sugar.

    Cover with foil and cook for a further 1 and a half hrs

  13. 13

    The dish is ready when the meat is tender snd the onions golden.

  14. 14

    Heap onto your dinner plate and serve with rustic mash.

  15. 15

    For an added twist - once the meat is cooked, add 1/2 cup macaroni to the dish, recover and cook for a further 15 minutes in the oven.
