Japchae - Korean vermicelli with meat and vegetables

Cooking Instructions

Boil water and cook Korean vermicelli for 7 mins.

Cut meat in strips. Add meat marination ingredients and keep it for 5-10 mins.

Cut all the vegetables in strips. Heat some oil in a pan and stir fry them. Set them aside in a bowl.

Heat some sesame oil in the same pan and cook marinated meat.

Once the vermicelli is cooked, drain water and cool it down with running water. Cut them to shorter length with a scissors.

Combine vegetables, vermicelli and meat in the pan.

Mix all the ingredients for the sauce and add them in the pan.

Adjust to your taste with salt or other seasonings. Sprinkle some sesame seeds. Enjoy!

At restaurants japchae tends to be quite oily and too rich. I wanted to season it to suit my taste. Authentically you have to fry the vegetables separately, but I stir-fried together.Add green and red peppers, komatsuna or bok choy. You can use anything suitable for stir-fry dishes. So I omitted the deep frying, adjusting my usual teriyaki chicken recipe, and made my own version of yangnyeom chicken!In Step 3, I use a non-stick frying pan so I don't add any oil to it.
