Japchae (Low-Carb Keto Version)

A quick and easy way to make japchae. Instead of frying the vegetables individually, I put it all in one pan. There was quite a lot of moisture but with some simmering, the moisture evaporated some what. I would lessen the dashi stock used next time. Still it was fuss-free and delicious! Please feel free to include any vegetables, chopped cabbage, carrots etc works too!

Cooking Instructions

Rinse noodles. Put in boiling water for 5 minutes then drain. This is to remove the smell from the shirataki noodles. Set aside.

Cook egg, set aside. Cut into strips once cooled.

Pan-fry meat, set aside.

Heat 1tbsp sesame oil, add minced garlic and veggies. Cook till done. Add in noodles, marinade sauce, and meat. Mix well. Sprinkle with sesame seeds and a drizzle of sesame oil. Done!!

I like the Moranbong brand Japchae seasoning so I tried to recreate my own mix following the ingredients list on the back of the package.It is a little different from the authentic ones but you can still enjoy nice Korean taste with rice.Why not add onions, green vegetables like garlic chives or bok-choy or shitake mushrooms, shimeji mushrooms or wood ear mushrooms?It is better to add the green vegetables like garlic chives at the finishing stage Step 4. As in the photo, I ate it with flaked Salmon. Its just seasoned Salmon with salt & pepper, seared and pressed down to get it to flake. Pairs well with stir fried beef or pork strips too.
