Ingredients

  4. 1 tbspchickpea flour (besan)
  5. 1 tsporganic coriander powder
  6. 1/2 tsporganic cumin powder
  7. Salt to taste
  8. 1 1/2 cupswater
  9. For Tempering:
  10. 2 tbspmelted ghee
  11. 1 tspcumin seeds
  12. 5small organic dry red chilies
  13. 1 sprigcurry leaves
  14. 1/4 tspasafoetida
  15. 1/2 tspKashmiri red chili powder
  16. For Garnish:
  17. 1 tbspfreshly chopped coriander leaves

Cooking Instructions

    Prepare Mango Puree:
    Peel ripe mangoes, blend the flesh until smooth. Measure 1 cup.

    Make the Base Mixture:
    In a bowl, whisk together mango puree, yogurt, besan, coriander and cumin powder, salt, and water until smooth and lump-free.

    Cook the Kadhi:
    Transfer to a kadai. Cook on medium flame until it boils, stirring constantly. Then simmer on low for 5–7 minutes. Set aside.

    Prepare Tempering:
    Heat ghee in a tadka pan. Add cumin seeds, let them sizzle. Add red chilies, curry leaves, and asafoetida. Turn off the flame and stir in Kashmiri red chili powder.

    Combine & Serve:
    Pour tempering over the cooked mango kadhi. Garnish with coriander leaves.
