  1. Vegetables:

  3. 1/4 cupOnion, thinly sliced
  4. 1/4 cupGreen capsicum, finely chopped
  5. 1/4 cupRed capsicum, finely chopped
  6. 1/4 cupPeas+carrots frozen
  7. Masala:
  8. 1 tablespoonCumin
  9. 1 tablespoonGinger garlic paste
  10. 2Green chilies, finely chopped
  11. 2 tablespoonsKashmiri chili powder,
  12. 1/4 teaspoonTurmeric powder
  13. 1 tablespoonCumin powder
  14. 1/2 teaspoonHimalayan salt
  15. 1/2 teaspoonGaram masala powder
  16. 2 tablespoonsCoriander, finely chopped
  17. Pinchgrated nutmeg
  18. 1 tablespoonkasthuri methi
  19. 1/4 cupBread Crumbs
  20. 2 tablespoonsCornstarch
  21. 2 tablespoonsroasted chana, Powdered

    Steam cook the potatoes in a pressure cooker. Do not add water to the potatoeswhen cooking. peel them and mash them in a bowl.
    Grind 4 slices of bread in a blender. The crumbs are ready. Heat 1 tbsp oil in a pan on medium heat, fry the cumin seeds, add green chillies and onion and fry. When the onion turns brown, add Kashmiri chilli powder, turmeric powder and cumin powder and stir. Add the capsicum and stir fry until soft, add peas and carrots and fry.

    Add Himalayan salt, garam masala powder, stir, let it get aromatic when roasted and then cool. Then mash the cooked veggies. Add the mashed veggies the mashed potato bowl. Add Grated nutmeg, kasuri methi, bread crumbs, roasted chana powder. Salt as required. Add chopped coriander and mix well. Make balls the size of a large lemon. Apply oil on your hands and flatten them; Place the flattened kebab in the crumbs
    cover with the remaining bread crumbs on a plate., smooth the edges,

    I used an iron skillet for shallow frying the kebabs. Heat oil in the skillet iover medium heat. Grease it with oil and arrange the kebabs on top. Pour a tablespoon of oil around each one. Reduce the heat a little and turn it every now and then. It should be crisp on the outside, golden brown; don't let it burn. transfer the roasted kebabs to a serving plate. You may serve them with ketchup or chutney
