Ingredients

  1. 1red bell pepper
  2. 1green bell pepper
  3. 2eggs
  4. 1handful of cilantro leaves with stalks

Cooking Instructions

    Preheat oven to 350°.

  2. 2

    Slice bottoms off of bell peppers to form a cup for the eggs. You may need to slice of just a bit on the bottom of the pepper in order for it to sit flush.

    I also sliced rings from the bell pepper to make them in the skillet versus the oven as well.

    Slice the remaining bell pepper so you have strips or "stalks" for your flowers.

    **Oven method**

    Precook pepper bottoms, strips and rings for 10 minutes. Remove then let cool.

    Spray a baking dish with nonstick spray and add pepper bottoms and rings to the pan. Crack an egg in each pepper bottom and ring. Bake in oven for 5 to 10 minutes until egg is cooked thoroughly and yolk is sunny side up.

    **Skillet method**

    (Best done for bell pepper rings)

    Add rings to a skillet sprayed with nonstick cooking spray.

    Over low to medium heat, crack an egg in each pepper ring carefully. Cover skillet and allow to cook for 5 to 10 minutes until egg is cooked thoroughly and is sunny side up. Do not over cook eggs, like I did in my picture lol

    Once all bell pepper flower eggs are completely cooked, transfer to a plate. Add bell pepper strips for the fllower stalks, and baby spinach leaves for flower leaves and cilantro or parsley to garnish for the "grass."
