This is sweet sponge cake baked with alot of eggs to trap air and done with butter icing. Yummy
Cooking Instructions

Prepare your baking tin and aet aside. Pre heat oven to 170 degrees celsius or medium heat

Measure all your ingredients. Take your dry ingredients and sift them onto a medium bowl i.e flour and baking powder and set aside.

In another bowl mix the sugar and butter.

Using a mixer or a whisk, cream the two until pale. Add vanilla essence.

Add the eggs, one at a time, beating until each egg is fully incorporated before adding another one
- 6
Add flour and continue beating on low speed just until combined
- 7
Pour the batter into the cake pans and place on the oven middle rack to bake
- 8
Bake for 40 mins to 50mins, or until a knife or a skewer inserted comes out clean. Cool for about 5 mins in the tin then removw cake from pan ans set on a tray or cooling rack

Just a very basic, everyday free-from cake recipe, easy to adapt to other flavourings. I used 7" tins in the main picture but on hindsight I should have used slightly smaller ones so I've instructed the use of 6" tins with their cooking time. If you double the ingredients you could use 7" or 8" tins instead for achieving thicker cake layers, just add an extra 15 minutes or so onto the baking time.
