Ingredients

  1. 1 1/2 litresFull cream milk
  2. 1 1/2 cupSugar
  3. 12-15Blueberries
  4. 12-15Raspberries
  5. As requiredSaffron (kesar)
  6. 8-10Green cardamoms
  7. 10-15Dried rose petals
  8. 8-10Black peppercorns
  9. 20-25Pistachios blanched and peeled
  10. 10-12Almonds blanched and peeled
  11. 10-15Cashew Nuts
  12. 3 tablespoonsMelon seeds (magaz) soaked
  13. 3 tablespoonsPoppy seeds (khus khus) soaked
  14. For presentation
  15. 6-7raspberry
  16. 8-10blueberries

Cooking Instructions

  1. 1

    Making of Thandai
    Grind together almonds, cashew nuts, pistachios, melon seeds and poppy seeds with a little milk to a fine paste. Bring milk to a boil in a pan. Add saffron and mix.

    When the milk begins to boil add sugar and simmer till the sugar melts. Grind green cardamoms, dried rose petals, cinnamon and black peppercorns to a fine powder.

    Add the paste to the milk and mix well. Simmer for three to four minutes. Add the powdered masala to the milk and mix well. Chill the milk

    Making of blueberries syrup - in mixie jar take blueberries and make smooth purée sieve it, thantake pan and add sugar and blueberries purée and boiled it make thick blueberries syrup

    Making of raspberry syrup -In mixie jar take deseeded raspberry and grind it sieve it,than take pan and add sugar and raspberry purée and boiled it make thick raspberries syrup

  6. 6

    Make a design on the inside of the serving glasses with blueberry syrup and raspberry syrup Pour into the glasses and top up with the prepared thandai.

  7. 7

    Garnish with blueberry and raspberry.Serve chilled.
