Cooking Instructions

COOKING RICE AND DAL
Rinse together 1 cup rice and 1 cup arhar dal (tuvar dal or pigeon pea lentils) a couple of times in water. Drain all the water and add both rice and dal in a pressure cooker.
Add ¼ teaspoon salt, 5 cups water and 1 tablespoon turmeric.
Pressure cook for 15 to 16 minutes on medium flame.
When the pressure settles down on its own, remove the lid and check if the rice and dal are cooked together.

So when the dal & rice are cooking, you can also start to prep and cook the veggies.

Now in a pan heat 1 tablespoon oil roast the masala

Mix all the ingredients of masala

Let the masala cool.

Now grind the masala ingredients

Heat 1 tablespoon sesame oil in a pan.
Add Rai
Add curry leaves 🍃 - 8
Add 8 to 10 shallots
Saute for 1 minute on a low to
Medium flame.
Add the boiled veggies. - 9
Now mix the tamarind extract

Add Hing powder and salt as per taste

Now add the grinded masala powder and boil the sambar.

Boil sambar till the consistency becomes thick.

Now sambar and rice dal is ready mix them well.

Mix the sambar and dalrice well.
Your delicious sambar saadam is ready. - 15
your Signature dish SAMBAR SAADAM is ready you can accompany with a side veggie dish, curd, pickle or appalam (papaddums)

It is usually had with a watery broth made out of greens mostly.. called bas-saaru..or massoppu saaru which is basically the broth got from cooking the greens and lentils. Today I paired it with my all time favourite moolangi sambar (radish curry). I have said it before also, I love this vegetable! I feel it's very underrated!The twist in the mudde today is, I've added brown rice.. just as a trial.. Mudde is usually done purely out of ragi flour.. you need a good practice to get the proportions and handling right when doing this.. as it can end up becoming one hard lump or a watery mess!! Believe me, I've been there, done that and thrown it away too 😝. So, just to make it easier to handle, I added some rice and it turned out yum!Topped it with ghee and poured hot sambar.. my lunch is done right! 😄#myfirstrecipeSoumya Pai
