Karela Curry sabzi is a simple and interesting side sabji made with bitter gourd and kaju.
This vegetable fry recipe is very quick and requires basic spices which we use in our daily cooking.
Serve it with roti and gujrati kadhi a wholesome lunch or dinner.

Cooking Instructions

Wash karela and dry completely.cut the karela (top and bottom part) and peel it skin.then make round size,chop all the same way.

Sprinkle some salt on chopped karela and mix well.rest karela for 2O to 25 minutes,so it will release its bitter water.squeeze water from Karela and keep it aside.

Now coat karela with besan.

Heat Oli in a pan and fry Karela on medium flame till they become slightly crisp.

Then in a mortal pestle,add peanuts, sesame seeds and gathiya crush it.

Take out into mixing bowl,add turmeric powder, coriander powder, cumin powder, Red chilli powder jaggery, garam masala, lemon juice,and coriander leaves,mix well. Masala is ready.

Heat Oli in a pan on medium heat,add mustard seeds, cumin seeds, hing, ginger paste and green chilli paste, saute for a minute.

Then prepared masala on karela and mix well.

Cover the cook subzi for 5 minutes on law flame so,all masala flavour absorb in it.

Serve it.
