Ingredients

  1. For Boiling the Broad Bean Seeds:
  2. 1 cup Hulled/shelled from 500 gms Broad BeansBroad Bean Seeds
  3. 2 cupsWater
  4. 2 tspSalt
  5. For Preparing the Seasoning:
  6. 2Dried Red Chillies
  7. 1 sprigCurry Leaves
  8. 1/2 tspCumin Seeds
  9. 3 clovesGarlic
  10. For Preparing the Broad Bean Seeds Fry:
  11. 2 tbspSesame Oil
  12. 1/2 tspMustard Seeds
  13. 1/2 tspCumin Seeds
  14. 1/2 tspRoasted Chana
  15. 1/2 tspUrad Dal
  16. 1Dried Red chilli
  17. Turmeric Powder (Pinch)
  18. 2-3 tbspFreshly Grated Coconut

Cooking Instructions

    Firstly, to shell/hull the beans, take away the strings from both the sides. Separate the seeds from the beans.

    Wash and soak these seeds in water for minimum 4-5 hours. I have soaked it only for 2 hours in lukewarm water. This process makes it easy to shell/hull the seeds. The outer shell is tough to chew. The inner seed is very tasty and fragrant. This process is time consuming but it enhances the taste of the dish.

    For boiling the seeds alongwith few chopped beans, add water, beans and the seeds in a cooking pot. With the flame on high, let it come to a boil. Add salt and let it boil for 10-12 minutes. Switch off the flame and strain the beans and seeds and set it aside.

    Grated the fresh coconut and set it aside.

    Next to prepare the seasoning, heat a pan, add the chopped garlic, chopped dried red chillies, curry leaves and cumin seeds and dry roast it for 2-3 minutes on low flame. Transfer it on to a plate and let it cool. Transfer it to a grinder and grind it into a coarse powder. The seasoning is ready. Set it aside.

    Finally, for preparing the “Broad Bean Seeds Fry”, Heat sesame oil in a pan. Add mustard and cumin seeds, roasted chana, urad dal and dried red chilli and allow the seeds to crackle/sizzle. Add the boiled beans and seeds alongwith the turmeric powder and saute for a minute.

    Do not add salt again as it was added earlier while boiling the seeds and beans.

    Add the prepared seasoning and mix it well.

    Add the freshly grated coconut and mix it well. Saute it for 4-5 minutes on low flame. Switch off the flame.
