Ingredients

10-15 minutes
3-4 servings
  1. 2medium cucumber, peeled
  2. Salt to taste
  3. 1/4 cupRoasted peanuts
  4. 2green chillies chopped
  5. 2 tbspcoriander leaves
  6. 2 tbspscraped fresh coconut
  7. 1 pinchsugar
  8. Tempering
  9. 2 tbspghee
  10. 1/2 tspCumin seeds
  11. 1 pinchasafoetida (high)
  12. 2-3 tbspPomegranate pearls

Cooking Instructions

    Chop cucumber and transfer into a bowl. add salt, mix and set aside of a 10 minutes.

    Put peanuts in a mortar pestle and coarsely pound it
    Roughly chopped green chillies.

    Gently squeeze the chopped cucumber to remove the excess water and transfer into a bowl.
    In the same bowl add green chillies and coarsely pounded peanut. Add pomegranate pearls,coriander leaves and coconut and mix well.

    Add sugar and mix.
    For the tempering heat ghee in a small pan add cumin seeds and let them change colour. Add asafoetida,mix and pour the tempering over the cucumber mixture and mix.
