Soya Flour and Methi Paratha

Ingredients

4 servings
  1. 1 cupsoy flour
  2. 1 cupbesan
  3. 1/2 cupwhole wheat flour
  4. 1/4 cuprice flour to dust band roll out the parathas
  5. 1 cupmethi leaves, washed and chopped fine
  6. 1large boiled and mashed potato
  7. 1 teaspoonor as per taste spices: Turmeric powder, chill powder, cumin and coriander powder, aamchur powder, garam masala
  8. 1/2 teaspoonor as per taste salt, sugar and lemon juice
  9. 1/2 teaspooneach of sesame seeds and ajwain seeds
  10. 1 tablespoonchopped coriander leaves
  11. 1 tablespoonghee
  12. 1 teaspoonoil per paratha for roasting + 1 tablespoon oil to cook methi
  13. 1 cupyoghurt and 1 teaspoon pickle for serving per plate of 2 parathas

Cooking Instructions

    First, heat 1 teaspoon oil and stir cook the methi leaves with a pinch of salt on high heat for 5 minutes. Turn offy heat and keep for 10 minutes. Take a deep mixing bowl and mix the flours, mashed potato, seeds, spices,methi leaves, lemon juice, salt and sugar.

    Rub the flour with ghee and mix well. Knead to a smooth dough adding water in small batches. Keep it covered for 10 minutes.

    Heat a skillet, Roll out one lemon sized portion of dough into a round shaped paratha. Roast on the hot skillet on both sides.

    Apply oil on sides and top and roast till brown. Make all the parathas similarly. Store in a cloth lined hot box.

    Serve hot with yoghurt, pickle, curry or any chutney of your choice.
