Tofu is a great source of protein and we eat it often even if we aren't vegetarian. Donburi style tofu is satisfactory!
作り方

Remove excess water from the tofu before cooking.

Combine all the broth ingredients in a small Dutch oven.

Heat to medium and bring to a boil.

Add onions, carrots and shiitake, and cook for 2-3 minutes.

Add tofu and cook until heated through.

Taste, adjust with salt as needed.

Stir the eggs into the broth. Cover and cook for 1 minute.

Add snow peas over the eggs, then turn off the heat.

Cover and let the eggs/peas cook for about 1 min.

Serve 1/4 portion each over a serving of rice.
コツ・ポイント
You can choose firm tofu, but we prefer soft tofu for this dish.
