Weigh all the required ingredients

Sieve the flour

Dissolve yeast in 1/2 the milk

Add enough flour to make a thick batter

Cover the batter with a cling film and let it ferment

Rub the butter into the rest of the flour

Beat the eggs and add the salt and sugar

When the batter has fermented,add the flour together with the liquid mixture

Mix slowly for 5 minutes to form a soft dough

Place the dough in a lightly oiled bowl

Cover it with a dump cloth and let it prove for 30 minutes

Knock back the dough and knead on the table

Let it rest for 10 minutes before processing

Scale the dough into 60g pieces

Roll into balls and make a hole on each using the rolling pin

Carefully place each piece into a deep fat fryer

They should not be cooked under high temperatures

Turn-over when brown on one side

Drain well on a greese-proof paper

Smear the top part with the jam

Sprinkle desiccated coconut on each
