Another delicious rice biriyani variation that will make you go ga-ga

Ingredients

  1. 1 cuplong grain biriyani or basmati rice
  2. Vegetables of your choice
  3. 2ripe tomatoes
  4. Tomato paste
  5. Spices
  6. Ginger
  7. Garlic
  8. Garam masala
  9. Chat masala
  10. Pilau/biriyani masala
  11. to tasteSalt and pepper
  12. Red chilli powder
  13. Turmeric/saffron for coloring the rice

Cooking Instructions

    Parboil your rice till al dente(almost cooked)

    Prep your vegetables. Blanch them and retain that water

  3. 3

    Saute your onions and garlic till translucent. Add your tomatoes and tomato paste and let it cook for sometime. Add a little water(from the blanched vegetables) to create a paste

    Add in your spices and the vegetables. Add some water (if needed) and let it cook till ready

  5. 5

    Get your parboiled rice ready

    Get a big pot for this. Start with a layer of rice

  7. 7

    Followed by the vegetables

  8. 8

    Do so for the rest of the layers. Rice should be the last layer. Sprinkle some turmeric or saffron solution over the rice. I added some green food color too.

    Add a little water and let the rice cook covered on a low flame for about 5-10 minutes or till ready

    Serve and enjoy
