I have family over and I made chilli. Also, ground beef is hard to find right now and the only thing we could find at the store was this beef and steak. Ground beef had a limit on it of 3 lbs. So, we got a little creative.
Cooking Instructions

In large skillet brown your ground beef on medium high heat. Drain grease and transfer to a large pot. In same skillet brown the carne pasada beef. Drain and transfer to large pot.

Add your seasonings and drain your beans and put in the large pot. Add the other ingredients. Let cook on low till it's warmed through and the beans are soft. I add canned corn sometimes to my chilli. You can use any of the of the listed toppings or sides. Enjoy.

This recipe was modified from serious eats. I use coarsely ground chuck instead of short ribs as it's less work and you dont have to pick through bones and chop hot meat. You can substitute 1/2 cup chile powder for the whole chiles, but you'll lose complexity. Quality dried chiles will be pliable and bend. You can also use 3 15oz cans of beans instead of dried, but they wont have as good of texture. Finally, if you have the time/space, you can add the beans directly to the chili base with 2 cups additional water and cook them in the sauce 2-4 hours in an oven at 225 F for wonderfully flavorful beans.

This is the first recipe from the 3 way mince and is quick and easy as the hard bit is already done. Serves 4 or 2 and 2 foils for rainy day plus one foil of chilli for jacket potato topping. Best to make this first with mince that has not been frozen then you can freeze remaining mixture.

Great chilli recipe, you can mix ut up: add more peppers for more spicy, take away for less spicy etc. Garnish with Oster crackers, tortilla chips, spicy cheese (or non spicy) sour cream. Put it in a crock pot to simmer all day for a party. fresh chorizo found meat dept.
