Cornbread Pancakes

I have pancake mix in a box. Only requires water. I opted to make things difficult because it’s a Sunday and I and nothing to do. As I was going along, I thought of some interesting flavor profiles that I thought would work well with this type of pancake.

I have pancake mix in a box. Only requires water. I opted to make things difficult because it’s a Sunday and I and nothing to do. As I was going along, I thought of some interesting flavor profiles that I thought would work well with this type of pancake.
Cooking Instructions

Whisk together all dry ingredients in a bowl.

Add eggs, honey, molasses and milk. Whisk together. (I was absolutely awestruck by the beautiful golden color).

Butter pan. I used a 1/2 cup measuring cup to portion each pancake. Pour batter in center of hot pan. When you see bubbles, it’s about ready to flip. When pancake becomes loose, push around pan to absorb butter. It’ll crisp the edges.

Continue the process until batter is depleted. Serve with butter and maple syrup. You can also serve with jam and whipped cream. Whatever suits you.

Cornbread Cornbread
This is a recipe from Alex Guarnaschelli that I amend slightly due to my liking. My family would be ashamed of me because this is not exactly southern cornbread, but I like it kind of smooth (less crumbly) and what they don’t know won’t hurt them. The other sinful thing I like, which I would strongly suggest, is putting an obscene amount of buttermilk into this cornbread (more than the recipe calls for) and pulling it out of the oven early so the middle is still raw.
