Cooking Instructions

Cook rice in beef stock and set aside. Stir fry the cooked beef with onions, ginger/garlic paste, seasonings and spices, and set aside. Dice carrots, spring onion, bell peppers,, onions, and finely grate scotch bonnet.

On a medium heat place a fry pan, heat up oil add onions, ginger/garlic paste until fragrant add scotch bonnet and spices (bay leaves, mixed spices, curry, cinnamon, thyme, salt and seasoning) allow to release flavor. Add carrots and sweet corn and stir fry for 3 minutes, add bell peppers, add beef and soy sauce (optional) stir to combine. Add the cooked rice and mix thoroughly u can adjust the seasoning at this point. Add spring onion and stir. Garnish with fresh mint or parsley and serve.
