Ingredients

  1. Halfcup peanut butter or groundnut paste
  2. leavesUgu/spinach/moringa
  3. Teaspoonginger paste
  4. Teaspoongarlic paste
  5. Some grated scotch bonnet pepper
  6. 1medium onion, chopped
  7. Halfcup vegetable oil/palm oil
  8. Curry powder
  9. Seasoning
  10. Teaspoonlocust bean powder
  11. Salt to taste
  12. Halfteaspoon all-purpose seasoning
  13. Cooked meat or chicken

    In a pot heat the palm oil or vegetable oil. Stir fry the onion, Scotch bonnet pepper, ginger and garlic pastes for about 3 mins.

    Add the salt, curry powder,all-purpose seasoning and stir.

    Add some boiled water depending on the quantity you want.

    Season to taste and then cover to boil.

    Once it comes to a boil add the protein and the mixed peanut butter.stir and reduce heat to medium.

    Cook for about 7mins and then lastly add the ugu leaves and locust bean powder.

    Stir and cook on low heat for another 7 mins. I served mine with eba.

    Meanwhile mix the peanut butter or groundnut paste with some cold water to a nice and smooth consistency.
