Pan Fried Cod With Onions & Tomatoes

This is a dish I like to make when I'm short on time and want something nutritious and delicious. Delicate flaky cod with sweet tomatoes, herbs and onions plus smoky paprika make this pretty irresistible. I like to serve it on some wholegrain rice mixed with quinoa.

Ingredients

20 mins
4 people
  1. 4skinless cod fillets, at around 150g each,
  2. 2onions, thinly sliced,
  3. 10salad tomatoes, sliced,
  4. 2 tspsmoked paprika,
  5. 1 tspcayenne pepper,
  6. 3 clovesgarlic, crushed,
  7. 2 tspdried parsley,
  8. Some fresh basil leaves, chopped,
  9. Salt & pepper to season,
  10. 1.5 tbspolive oil for frying,
  11. 1large dash of water

Cooking Instructions

    Heat a large heavy based non-stick frying pan up over a medium heat. Add the olive oil. Once hot, add in the onions and begin to fry for around four minutes until becoming soft and golden on the edges. Scrape the onions to the sides of the pan then add in the cod fillets. Fry for about 2-3 minutes until just becoming golden then flip them over.

    Now add in the tomato slices by placing them in and around the cod pieces on top of the onions. Sprinkle over the cayenne pepper & smoked paprika then season well with salt & pepper.

    Add the crushed garlic and the dried parsley then gently stir it through the onions and tomatoes. Fry for around 30 seconds until fragrant then de-glaze the pan with a good dash of water. Bring to a simmer and cook for another minute or two. Scatter over the fresh basil leaves - once wilted, remove from pan from the heat. Serve up and enjoy! :)
