Tofu Cake with Walnuts and An (Sweet Bean Paste)

I wanted to have a cake with anko (sweet bean paste) in it, so I made one using a tofu based batter.

The cake looks prettier and more like a traditional Japanese sweet called "ripped dumplings" if you don't cover the walnut bean paste totally with the last addition of batter. Recipe by kurukurumin

Ingredients

  1. 100 gramsJapanese pancake mix
  2. 150 gramsTofu
  3. 1Egg
  4. 20 gramsSugar
  5. 100 gramsCanned cooked adzuki beans
  6. 20 gramsWalnuts

Cooking Instructions

    Cream the tofu, mix in the egg and sugar, add the pancake mix, and fold in.

    Take out half the can of boiled adzuki beans into a container. Combine with coarsely chopped walnuts and mix well to make the walnut an.

    Butter a cake pan lightly. Pour 1/3 of the batter, and add 1/2 of the walnut paste in dollops.

    Add another 1/3 of the batter.

  5. 5

    Drop on the remaining walnut paste, and pour in the rest of the batter. You don't need to hide the walnut paste with the batter.

    Bake for 35 minutes at 360°F/180°C, and it's done.
