Cooking Instructions

Wash your chicken and cleanse thoroughly

Wash and grind your ginger,garlic,onions and some scotch bonnet pepper in a blender to a smooth paste

Add your chicken into a pot and add in this paste

Add your seasoning and your salt with your curry and thyme,all to your taste and preference to marinate your chicken

Then after setting aside for about an hour or even the night before,mine was the night before so I set aside in a pot

Next you place your marinated chicken on the fire and allow to simmer a bit under low heat,don’t add water to it

Then let it simmer for about 20mins the reason for this is to allow your chicken or beef,also add in your hotdog or whatever you’re using to absorb the ingredients and flavors embedded in it already

Then after that 20mins,you can add in water because we need stock water when cooking our fried rice

Let it cook for about 10-20 mins your preference though,then you’d separate your chicken from the stock water

Then in a frying pan,add in your vegetable oil and heat it up then add in your chicken and hotdog,deep fry,some people would love to add in onions to test the oil first and give it this extra flavor before going in with the chicken and I did that too😊

So once your chicken is deep fried,set aside

Now to the preparation of our fried rice

All your veggies,wash and dice them into moderate or perfect sizes,I mean your carrot,spring onions,bell pepper,scotch bonnet pepper,cucumber then set it aside

In a bowl also dice your hot dog or sausage whatever we call it 😊😊

Then our stock water drill in through a sieve so that the rudiments that is the whole residue from the chicken is drilled out,some people might prefer to use their stock water with the residue in it though 😊

So once you’ve done that put into your pot that you’d be using for cooking on the fire then add in your rice that has been washed thoroughly and clean into the stock water

Then add in your salt, seasoning cubes for me I used knorr chicken because it gives this chicken flavor to food 😊😊,then I add in my curry and thyme then onions then some ginger and garlic,like I said seasoning should be to your preference

Then you add in your vegetable oil,a generous amount,not too much but a perfect quantity then you mix all with a turner,from top to bottom so that the seasoning can accelerate round

Then you let it cook

In a frying pan,add in vegetable oil, add in some diced onions,let it fry a bit then go in with your veggies bit by bit then you add in your hot dog,then salt and seasoning cubes

It should fry and cook a bit that way 😊😊, this method prevents spoilage of fried rice because lots of people always avoid this particular dish because they believe it tends to spoil easily

Then once your rice is all cooked and done you add in all your stir fried veggies then your mix with a turner from top to bottom till it’s gone all round

Then you let it just heat up a little bit more on low heat, some people would actually still add in butter to make the rice extra shiny but I didn’t do that I added enough vegetable oil at the beginning,like I said everyone has their preference 😊

So once that’s all done then perfectto I served it and did some food dressing 😊
