Cooking Instructions

Heat the oil in a large pot over medium heat.
Add the onion and cook, stirring occasionally, until the onion starts to go translucent.
Add the garlic and cook for 5 more minutes. - 2
Add the minced beef and stewing beef to the pot and cook, stirring occasionally, until the meat is no longer pink,
Stir the chilli powder, paprika, cumin, coriander, oregano, and cinnamon, into the pot.
Add the tomatoes and Guinness and stir together well.
Then transfer to a slow cooker for up to four hours - 3
Serve on a warm plate with some rice, capers and a good dollop of sour cream on top.

Sophie's sausage, bean and Guinness stew
I used red kidney beans & rosecoco beans in this, but they're easily interchangeable with other types of beans. This is great on its own, or make it go further with rice. If you have leftovers, try chopping the sausages before reheating and serving with salad & cheese in a wrap.

I was looking for a little bit of tradition for St. Patrick's day. I didn't want to tackle my aunt mo's recipe for corn beef and cabbage because she has perfected it over the years, so I did some recipe hunting online and found one on simply.com and combined it with others. I tweeted it ( for example I doubled all spices because I don't believe Irish season their stuff to an Italian cooks liking!) enjoy and Erin Go Brah!

After our trip to Ireland I longed to make a Guinness stew that was similar to what we had there. This stew has a wonderful beefy flavor and it fantastic anytime of the year. Guinness bread is a wonderful compliment to this dish as well.


Beef and Guinness Stew
This is a larger recipe that would feed 8 or so. Rich and hearty. I served with smashed potatoes (mashed potatoes with the peels intact). It gives it a more home style or "peasant" presentation. Serve either in a "hole" created in the smashed potatoes, or with a dollop of potatoes on top.
