Only as spicy as the salsa you add. Very flavorful!

This is a hit with my family. People who taste this are very surprised at how flavorful this is. You can double the recipe for more servings, and each ingredient is optional of course... My kids always prefer no onions. But it still doesn't take the taste away.

My mom used to make this soup from the leftover chicken bones after cooking a whole chicken for dinner. The recipe also works with turkey.

When it's getting cold, we always want to have hot hot chicken soup... we bought whole chicken and use pressure cooker to make it.

This was a really easy soup to make but full of flavour, something about the lime and cilantro is just perfect. I garnished with tortilla chips.for an extra crunch.

I was missing home and since it's fall I was feeling like some sort of green chile stew. However, I'm not a huge fan of the typical group beef and potato combo that is green chile stew, so my mom inspired me to make this instead!

I decided to try something new and ordered the lemon chicken from a Chineese restaurant, it was really good. I really like soup and was looking up lemon chicken soup recipes, they all involved a croc-pot. I am not a big croc-pot user, so I decided to try to come up with something inspired from the recipe i saw online. I saute the vegetables before putting in soup to save time. It came out very good. I also like to cook chicken myself & not use rotisserie chicken from the store in soup.
