Cooking Instructions

Wash and boil your beef with stock fish,salt and onion only.

Wash and chop the water leaf and set aside.. pound or blend the afang and set aside..

Add palm oil to your boiling pot of meat.. cover and allow to boil for about 2min..

Add seasoning cubes and pepper to the boiling pot of meat and stock.

Add your cow skin and crayfish... pour your afang and water leaf at the same time so that none over cook..

Stir well and let it simmer for 10 sec..

Soup is ready and be served with pounded yam, garri,wheat or semovita

About 30 some years ago, I was a bi-lingual aid working with pupils of 1st, 2nd and 3rd grades at Cook Elementary school in Garden Grove. There was a little girl that I don’t remember the name but I can still vividly remember her pretty and smiling face. She was a first grader. She used to say fi for five, ri for rice. And she said loodoo for noodles. No s at the end. I thought it was so cute. I tried to help her to say noodles correctly. But in a conversation, she would just forget and so noodles would be loodoo...with no s.Today, I don’t know why but I feel like to make some Vietnamese Chicken Loodoo Soup. I miss her.
