Ingredients

  1. 3 cupLeftover mashed potatoes
  2. 3 cupHam stock (boiled down from bone and drippings)
  3. 1 canCreamed corn
  4. 1 cupMilk or cream
  5. 3 cupFrozen or canned corn (drained)
  6. 1 lbchopped leftover ham
  7. 1/2 eachOnion, diced
  8. as neededSeasonings to taste. Start with no salt as ham is salty.

Cooking Instructions

  1. 1

    Saute the onion in a little butter or oil until tender.

  2. 2

    Combine all remaining ingredients in a pot.Stir well to combine and heat over medium to medium low heat. Stirring occasionally.

    Once chowder is heated through, taste and add seasoning to your liking. I added some garlic powder, onion powder, parsley & white pepper to mine.

    This could easily be put in a slow cooker and left on low all day as well.
