Chicken Soup with Fresh Spices

Ingredients

3 servings
  1. 1union, (quartered)
  2. 1tomato (quartered)
  3. 1carrot (Cut into cubes)
  4. 1Potato (cut into cubes)
  5. 2 bunchChinese Celery
  6. 5Chicken Thigh
  7. 1inch ginger
  8. 3cloves
  9. 1/4nutmeg
  10. 1cardamon pod
  11. 2 cmcinnamon sticks
  12. 1/4 tspwhite pepper
  13. 1/2 tspsalt
  14. 1 bunchCoriander (for garnish)

Cooking Instructions

    Heat cooking oil in a stockpot. Stir-fry chicken first for two mins then add onion, carrots, potatoes and close the lid. Cook for another 5 mins till slightly brown.

    Add 1 liter water into the stockpot

    Combine all the spices into a muslin bag or a tea-strainer and drop into the stockpot.

    Season with salt and pepper

  5. 5

    Let boil and add celery and tomato into the soup. Scoop up the floating stuff on the soup

  6. 6

    Simmer for 15 minutes or till the vegetables soften. Remove the spices

Living in Dublin with my Irish partner who is celiac. My recipes are Gluten Free (GF). Most of my recipes are Asian food and I use soya sauce a lot in them. Regular soya sauce is not GF, but you can get GF one from supermarkets.
