My mom used to whip this up in a pinch on a weeknight when a bunch of friends would stop by. Dont let the look of it fool you, super cheap and easy fix for a delicious and fast dinner!
Cooking Instructions

Mix all ingredients not cooked in a large bowl

Preheat oven to 375
- 3
Put all in a standard casserole dish

Bake at 375 for 40 to 45 minutes untill sausage is done and cornbread is moist. Feeds about 4 easy and can be easily doubled for a small army!

Breakfast casserole (with stuffing)
We wanted to find a recipe that was similar to Golden Corals breakfast casserole. Most recipes use biscuit mix, but my son likes stuffing. We found this on the internet. My suggestions would be to use a bit less milk or a bit more stuffing mix to get a drier consistency. I also used green onions and would have added bell peppers and black olives but my family doesn't like those.

There was this Italian Restaurant in Lower Manhattan that made great Polenta over Sausage and Peppers. I love polenta, but you have to stir it a lot to make. I decided to try a short cut and came up with this idea. Not as creamy as that old restaurant, but still very good. Another crowd favorite in my large and picky family.Basically, this can be made with any meat and vegetable combination. In the future, I plan on making it over Chicken & Broccoli. So far, I have made it over Chicken & Peppers and Sausage & Peppers(Twice). For the picture, I made it over Sausage &Peppers.I hope that you enjoy it as much as I did.
