The Utimate covonut cream pie in bars. It starts with a coconut shortbread crust that is covered with thin chocolate ganache layer then the traditional creamy custard coconut cream layer. Finally topped with whipped cream, toasted coconut and shaved chocolate.

Since I love triangle chocolate pies, I tried making them at home. This can be made regular or low carb. I made this one low carb. Measurements are the same whether you use bisquick and sugar or carbquick and Truvia. I am so pleased with this shortbread crust. I’m pleased with the whole thing! So easy and so good. This is exactly what I needed for an apple pie craving.

For an EXTRA special classic, aftet putting the filling in Oreo crust, drop 4 heaping tablespoons of grape jam on top in 4 different sections and swirl around with a butter knife. Now you have a PB&J Chocolate Pie ;)
