Ingredients

  1. 3ripe plantains
  2. 3whole eggs
  3. 1small Fresh tomatoes (chopped)
  4. 1small onions(diced)
  5. 1/8 teaspoonthyme
  6. 1 litrevegetable oil for deep frying
  7. 1/4chopped green bell peppers
  8. 1/8white pepper
  9. 1 teaspoonchopped parsley

Cooking Instructions

    Pour oil in a deep fryer and bring to heat up

  2. 2

    Peel plantains, cut and drop some in the hot oil, be careful not to over crowd the pan

  3. 3

    Let it fry till it turns golden brown. Remove and allow to drain on paper towels

  4. 4

    Crack eggs into a mixing bowl and whisk. Add seasoning, salt and pepper

  5. 5

    Stir in onions, tomatoes, bell peppers and parsley.

    Pour a table spoon of vegetable oil in a skillet making sure the bottom is evenly covered and let it heat up

  7. 7

    Pour in the whisked eggs, tilt the skillet to ensure the uncooked eggs can flow to open spaces

  8. 8

    Use a clean plate to flip the egg

  9. 9

    Let it cook for 2 mins

  10. 10

    Remove and serve with the fried ripe plantains
