I made a beautiful leg of lamb roast dinner for Sunday lunch,so come Monday I had loads of meat leftover so a quick and easy comforting October dinner.

Ingredients

  1. 2 lbcooked diced leg of lamb
  2. 4 largecarrots sliced
  3. 3 stickcelery sliced
  4. 2 largeonion, chopped chunky
  5. 2store bought country stew mix (i used knorr)
  6. 3 lbpotato peeled and cut into medium chunks
  7. 6 pintscold water (just enough to cover you made need more or less)

Cooking Instructions

    Peel and chop all the veg set aside

  2. 2

    Chop all the remaining meat of the leftover leg of lamb, place into a large pan, add the veg.

    Cover with cold water.

  4. 4

    Add country stew mix or make Ur own I was having a throw it altogether quickly dinner 😁

    Bring to a boil the reduce heat to a simmer and cook for 45-60 minutes (the potatoes help slightly thicken the sauce)
