Vickys Thai Curried Beetroot Soup, GF DF EF SF NF

This is litrally a 10 minute soup if you buy pre-boiled beets! Red Thai curry paste is great in this recipe as it contains garlic, lemongrass, lime leaf and coriander, very citrussy ingredients which work well with beetroot.

If you're not a fan of raw celery, neither am I but this soup is delicious! Celery tastes so much better cooked in my opinion. This is a thin but creamy, low calorie soup, great for lunch along with a sandwich. For more creaminess without the coconut cream, just add an extra potato Vicky@Jacks Free-From Cookbook -

I don't normally buy prepared, bagged fresh vegetables because they're expensive compared to whole veggies, but Tesco were selling short coded 480g bags of mixed broccoli florets and carrot batons off for only 20p so I bought a few bags. I used one of them to make this quick soup! Vicky@Jacks Free-From Cookbook -
Creamy Red Thai Curry Squash Soup Creamy Red Thai Curry Squash Soup
This soup is filling and luscious, while still being bright and fresh with the addition of lime, lemongrass and chile. Its best made with kobocha squash, which gives the soup an unparalleled creaminess, but pumpkin or butternut squash will work and it will still be awesome. I like to serve this with a side of jasmine rice and garnish with a sprinkle of pumpkin seeds, cilantro and a drizzle of heavy cream. Lance Wilson -

I love a curry but the sauce can be quite heavy on calories. This paste can be used as more of a rub or glaze and tastes delicious. Spice to taste! I'm not a hot chilli fan and find 2 deseeded chillis enough heat for me but each to their own! Vicky@Jacks Free-From Cookbook -
