Ingredients

  1. 2 tbspoil
  2. 1 tbspsalt
  3. 2 tbspdiced garlic (i used fresh)
  4. 1 1/4 tbsppepper
  5. 2 tbspground cumin
  6. 1/2 cuplime juice
  7. 1/2 gallonheavy cream
  8. 1 quartbuttermilk
  9. 1 1/2 cupdiced green onion
  10. 1 cupflour
  11. 1 1/2 cupcold water
  12. 2 cupshredded cheese (i used cheddar)
  13. 2 lbchicken diced
  14. 1 lbred potatos diced
  15. 1 eachsweet onion small diced
  16. 4 eachcelery stalks small diced
  17. 1 bunchcilantro rough chopped
  18. 4 eachwhole carrots lg. small diced
  19. 8 eachlarge jalapeno small sliced

Cooking Instructions

1 hour 20 mins

    Dice potatoes and boil (not to soft)

  2. 2

    Strain and set aside for later

  3. 3

    on medium high heat, heat oil and add garlic (DO NOT BURN)

  4. 4

    deglaze with white wine

  5. 5

    add chicken and veggies

  6. 6

    cover and cook stirring occasionally 15 minutes

  7. 7

    add seasoning cover and cook stirring occasionally 10 minutes

  8. 8

    add potato, buttermilk, heavy cream, and lime juice

  9. 9

    reduce heat to medium and cover, bring to a boil

  10. 10

    while waiting for boil combine flour and water and mix to make a roux

  11. 11

    when you reach a boil stir In roux

  12. 12

    remove from heat and add cilantro

  13. 13

    garnish with green onion cheese and cilantro

  14. 14

    SOUP IS YUMMY!!!!
