Ingredients

  1. 1 tbspolive oil
  2. 75 gramsonion
  3. 90 gramsleek
  4. 60 gramscelery
  5. 80 gramscarrot
  6. 2 tspthyme
  7. 120 gramsbeef
  8. 1 clovegarlic
  9. 40 gramsparsnip
  10. 200 gramssweet potato
  11. 60 gramspotato
  12. 500 mlstock
  13. 20 gramstomato puree
  14. 12 gramsprune
  15. 1bay leaf
  16. 40 gramsparmesan
  17. 2 tsplemon juice

Cooking Instructions

  1. 1

    heat oil in saucepan add onion, Leek, celery and carrot and sauté for 8 mins

  2. 2

    add thyme, beef and garlic and fry for 1 min

  3. 3

    add potato and parsnip

  4. 4

    add stock, tomato puree, prunes and bay leaf

  5. 5

    cover and simmer for 45 mins until tender

  6. 6

    blend until smooth

  7. 7

    add parmesan and lemon juice and stir together
