This is a season we have old yam in stock , and so is a season I love making yam porridge cos you can never go wrong in yam porridge with old yam, this particular specie of yam I used seems to have an extra added sugar cos the sweetness is second to non.

Yam Porridge

Ingredients

  1. Fresh pepper
  2. Fresh tomatoes
  3. Onions
  4. Blended crayfish with bonga fish
  5. Mackerel fish
  6. Palm oil
  7. cubeKnor
  8. leavesUgu
  9. to tasteSalt

Cooking Instructions

    Blend fresh pepper and tomatoes then set aside

  2. 2

    Peel your yam, then cut into cubes

  3. 3

    Season your fish with knor and salt then boil

  4. 4

    Set your pot on fire, then add palm oil

  5. 5

    Allow to heat for few seconds then add sliced onions then saute, add your blended tomatoes and pepper then continue to fry

  6. 6

    Add stock cube then fry till dry.

  7. 7

    Add your fish stock and more water enough to cook the yam

  8. 8

    Wash and add your yam, then cover and allow to start cooking

  9. 9

    Cook for a while then add blended crayfish and bonga

  10. 10

    Cook till it starts to thicken

  11. 11

    Taste and adjust, lower your hear till it thickens to your desired consistency

  12. 12

    Add ugu leaves, cook for few more minutes then bring down.
