Ingredients

  1. Olive oil
  2. 1 stickbutter
  3. 2large white onions
  4. 6large garlic cloves
  5. 5 poundsItalian sausage
  6. 2large green peppers and 1. red pepper
  7. 1large can plum tomatoes
  8. to tasteFresh basil
  9. to tasteDried oregano
  10. a fewBay leaves
  11. to tasteWhite pepper and salt
  12. Chicken broth (enough to cover)

Cooking Instructions

    Brown onions and garlic with olive oil and butter in a large soup pot.

    Slice your sausage on an angle about 1/2 inch thick. Let saute.

  3. 3

    Add peppers, tomatoes in can (squish them up first), basil, oregano and bay leaves. Add enough chick broth to cover.

    Let cook with lid on for about an hour. Taste, add white pepper and salt.

  5. 5

    Take lid half off and let cook till all taste comes together. Add more fresh basil to finish.
