I don't normally buy prepared, bagged fresh vegetables because they're expensive compared to whole veggies, but Tesco were selling short coded 480g bags of mixed broccoli florets and carrot batons off for only 20p so I bought a few bags. I used one of them to make this quick soup!

Ingredients

30 mins
4 servings
  1. 240 gcarrots, chopped / batons
  2. 240 gbroccoli florets
  3. 2 clovesgarlic, chopped
  4. 1large white potato, chopped
  5. 960 mlvegetable stock
  6. 1/2 tspdried thyme
  7. pinchnutmeg
  8. 240 mllight coconut milk
  9. to tastesalt & pepper

Cooking Instructions

30 mins
  1. 1

    Put the vegetables in a large pan with the vegetable stock and thyme. Bring to boil then turn down and simmer for 20 minutes

  2. 2

    Puree the whole thing then stir in the milk and nutmeg then season to taste

  3. 3

    Serve immediately
