Adobo blanco
Except for a couple of minor tweaks, this is my mom's adobo recipe. She's always insisted that 'real' adobo shouldn't have soy sauce. That's the way they prepare it in her little mountain town, and that's all there is to it. End of story. Having grown up with this version of the dish, I can't say I disagree. It was, and still is, one of my favourite Filipino foods. While I also love the better-known adobo which contains soy, I prefer this version for its milder, less aggressive sauce which allows all the flavours to shine through. Piled on top of garlic fried rice (garlic on garlic -- YES!), it's a plate of pure, homey deliciousness.#heirloom

Pork Adobo
This is a classic filipino dinner at our house. Super easy to make and it’s done in no time! There are different variations; chicken, or chicken and pork, or even shrimp! Today we used our favorite: Pork Belly. Serve with a side of steamed rice and some veggies. Dinner = Done.Ps; the measurements below are rough estimates. Grandma always eyeballs this recipe!

Easy Filipino Adobo
"Nearly three years ago, before most Americans could pronounce sinigang, let alone find a place to enjoy the sour soup, Andrew Zimmern predicted Filipino cuisine would soon become the darling of diners who collect restaurant experiences like seashells on the beach. Zimmern is not surprised, nor is he particularly impressed with his prophecy skills. As a globe-trotting food hunter, Zimmern has a rare vantage point from which he can monitor world cuisines." (from the Washington Post)Filipino adobo is a staple dish in the Philippines. It's easy-to-prepare, does not rot easily so it's the perfect dish for potlucks and beach trips, and the taste gets better in each reheat. The sweet and tangy taste of the dish is sooooooo addicting! Adobo is a perfect pair to steaming white rice.
