Easy Banana bread with cocoa nibs and blueberries

These yummy and aromat banana bake are very delicious and easy to make. These are very good, nutritious options for morning breakfast and for kids' school lunch. The mashed bananas give instant energy boost and blueberries and cocoa nibs refreshes mind and body and keeps you going for the whole day. My kids love the nutty and very unique taste of cocoa nibs in any dish, you can always replace them for any nuts or choco chips if you do not have them. But I would recommend you should have them in your pantry.

Ingredients

25-30 minutes

  1. 11/4 cupsAmaranth flour
  2. 1/4 cupsWhole wheat flour
  3. 1/4 cup Coconut flour coconut flour
  4. 2 teaspoonBaking powder
  5. 1 pinch or 1/8 teaspoonBaking soda just
  6. 3-4 tablespoon Powdered Jaggery
  7. 11/4 cupsRipe bananas , pureed
  8. 1/2 cupGhee
  9. 1/2 teaspoonVanilla extract
  10. 5-6 tablespoon cocoa nibs
  11. as neededSome dried or blueberries
  12. as neededGhee or oil to grease 4 large ramakins

Cooking Instructions

25-30 minutes

    Sift all the dry ingredients wheat, amaranth baking powder and soda and then add coconut flour and mix well.

    In a bowl add ghee and jaggery and heat to melt them a little. After mixture is cooled, Add banana puree.

    Mix well with a wired whisk or using hand blender. Add vanilla extract too.

    Grease the ramakins with some ghee and keep it ready. Also preheat the oven to 180C

    Mix dry flour mixture to wet mixture in 2-3 parts to avoid lumps

  6. 6

    Once everything is mixed add water or milk if required. Add cocoa nibs or any chopped nuts

  7. 7

    Pour into the ramakins, almost full. Garnish with some left over cocoa nibs and blueberries

  8. 8

    Keep the ramakins in baking tray and bake for 15-20 minutes @180C or until the top of the bread bounces back when touched.

    Remove and cool on wire rack. These can be baked in round tins or in muffin cups too.
