Roll into strawberry season with this gorgeous strawberry cake roll, decorated with a cute strawberry design and filled with strawberry whipped cream and homemade strawberry jam 🍓🍓
If you’re the type that wants to create beautifully decorated cakes that’ll wow your guests, but don’t want to deal with a laborious layer cake, you should definitely give a Japanese-style patterned cake roll a try.
Tips:
🍓Better to draw your design with pencil at the back of the parchment paper.
🍓To save time, you can draw design only on the half of the sheet, then when you roll the cake, start from the plain side to end with printed side on top!
🍓If you have extra pink paste, empty it into the red paste l, mix it and you can use the same piping bag for red and pink paste.
🍓Extra pastes can be freezed and used later.

Cooking Instructions

For the paste, in a food processor (or manually) mix butter and sugar till smooth. Then add the egg white and flour and mix till smooth paste is formed.

Divide the paste in different bowls according to design. I mixed 2-3 tbsp with green, 2 tbsp with pink, rest with red. (Or use the red one for dots too)

On the baking tray, lay the parchment paper and draw the design on it’s backside. Now trace the dots with pink colour. Then take another piping bag and make leaves with green.

You can empty the extra pink paste into the red one and mix it. Now put the red paste into the piping bag and make the strawberries. Freeze it till you prepare the cake batter.

In a big bowl mix the milk and oil. Add egg yolks and mix. Then add sifted dry ingredients and food colouring and mix well. Keep aside.

Now beat the egg whites while adding sugar in 3 parts. Also add the vinegar and keep whisking till medium stiff peaks form.

Now gently fold the whites in the yolks mixture in 3 parts. Do not over mix or use whisks. Pour the batter over frozen print and tap to remove bubbles. Bake for 15 mins.

Sprinkle icing sugar over the cake and lay parchment paper on it. Flip the cake, remove the inner parchment and fold the cake starting from the plain side. Give rest for 15 mins.

Gently open it and layer it with strawberry jam and whipped cream. Fold back and chill.
