I made this for my parents for dinner 40 plus years ago. They both wanted to know what I used for thickening. It turns out it was the way I cut the potatoes and floured the beef before I browned it. My Dad loved my stew! Needless to say, I've been making stew the same way ever since and never without thinking about my Dad. . . "Good times around the family table".

This is an Italian-style beef stew with plenty of tomatoes. I created this recipe for my son, who loves tomato flavors.

Instead of the usual beef stew recipe that can get boring, I changed it to lemongrass beef stew. You can enjoy it with rice noodles or bread without getting tired of it like with regular beef stew!

With the colder weather this past week, I wanted to make my home made beef stew, hope you enjoy.

I decided to make a beef stew now. It’s cold now and these dishes warm the soul. I never appreciated beef stew when I was younger. But I realize how fine of a dish it is in my older age haha.

Lima beans absorb the flavors of the stew they are cooked in, and when simmered overnight, turn dishes creamy. This stew with cured bacon, seared pork steak, onion, garlic, chipotle spices, roma tomatoes, lemon and pine apple makes the best creamy stew.When done, the meat and bacon are shredded fine with forks and mixed in with the stew.
