Ingredients

  1. For boiled and mashed veggies
  2. 5-6medium size potatoes
  3. 1 pccapsicum for boiled veggies and 1 pc diced capsicum for seasoning
  4. 1big aubergine peeled
  5. 1carrot
  6. 1small cauliflower
  7. 1/2 cuppeas
  8. For seasoning
  9. 3 Tbspoil
  10. 3 Tbspbutter or ghee
  11. 4medium sized chopped tomatoes
  12. 1green capsicum chopped
  13. 2 Tbspginger garlic paste
  14. 2 Tbsppav bhaji masala(which has cinnamon in it)
  15. 1 tspgaram masala (which has cinnamon in it)
  16. 1/4turmeric powder
  17. 2 TbspKashmiri red chili powder
  18. to tasteSalt
  19. 1/4 tsphing (asafetida)
  20. to tasteLemon
  21. Cilantro to garnish

Cooking Instructions

    All the veggies washed, peeled and cut roughly and pressure cook for 5 whistles when cool mashed it

    Now in a wide saucepan add oil and ghee add hing, ginger garlic paste fry for few seconds add chopped tomatoes and capsicum, pav bhaji masala, red chili powder and fry until it becomes soft and mashed it with potatoes masher now add mashed veggies and all the masalas, lemon,,, mix well, close the lid for 5 minutes taste and adjust salt and masala and lemon, serve hot veggie curry add some butter on it with roasted buns
