Ingredients

  1. 1 CupChinigura rice
  2. 4/5 cupwater
  3. 1/4 cupmilk
  4. 2 pinchsaffron
  5. 2 tablespoongrated coconut
  6. 2 tablespoonghee
  7. 1 cupsugar
  8. 1 pinchsalt
  9. 2cardamoms
  10. 1 inchcinnamon
  11. 2cloves
  12. 1/2 teaspoonrose water
  13. 1 pinchsaffron food color
  14. Dry fruits and nuts for Garnishing
  15. Pomegranate seeds for Garnishing

Cooking Instructions

  1. 1

    Wash the rice and cook them with water on stove.

  2. 2

    In the meantime, soak the Saffron with the milk and pinch of Saffron food color and keep it aside.

  3. 3

    When rice is 80% cooked, strain all the water and mix ghee. Don't cover it.

  4. 4

    Take a pan and heat it. Put ghee and fry the chopped nuts and fry fruits and keep them aside.

  5. 5

    Then add all spices in the rice and saute it for 20 seconds.Then add the grated coconut and Saffron milk in it.

    Now add salt, sugar, rose water. Mix them well and cover.Cook it for 10 minutes.

    Hyderabadi Zarda is ready. Garnish it with dry fruits and nuts and pomegranate seeds.If you like you can add baby sweets to make it more royal. Enjoy 😊
