Toast the amaranth and sesame seeds separately. Grind the fava beans into a flour. Toast and grind the dried shrimp, then set aside.

Separate the egg yolks from the whites. Beat the yolks together with the ground dried shrimp, fava bean flour, and amaranth.

Beat the egg whites until stiff peaks form, then gently fold them into the previous mixture. Heat plenty of oil and drop small portions of the shrimp mixture into the oil. Fry until golden and drain excess oil. Set aside.

Toast the chiles, remove the seeds, and cook them with the tomatoes in 3 liters (about 12 3/4 cups) of water. Blend and set aside. Grind the star anise, sesame seeds, and cinnamon in a mortar, spice grinder, or blender until powdered.

Heat a pot with a little oil and fry the spice powder. Add the sauce and bring to a boil. Season to taste and add the shrimp patties. Serve.
