The first time we had this classic pie, was when Casey was born, and nothing has been more comforting since.

Melt butter over low heat. Whisk in flour until golden brown. Add in onion, salt, and pepper. Cook until bubbly. Stir in heavy cream and broth, bring to boil, stirring constantly. Cook for 2 minutes and remove from heat.

Stir in vegetables, potatoes and chicken.

Roll out dough slightly to cover pie pan. Place pie crust on the bottom of the pie pan. Fill with mixture. Add 2nd pie crust on top. Wrap top access top crust under bottom crust edge, pressing edges together to seal. Pinch.

Bake at 425 degrees for 35 minutes, or until crust is golden.
